Benefits :Yellow peas, a legume to rediscover! It's low in fat, rich in carbohydrates, protein and dietary fiber, and contributes to the intake of several vitamins and minerals. Protein peas are a master asset, both agronomically and environmentally.
Legumes are excellent alternatives to animal proteins and are often described as flavor sponges.
Use:
Serve cooked peas in salads, soups or broths. They can also be added to rice or cooked with spicy Indian-style vegetables. The yellow pea is nicknamed the "chickpea of Quebec". In fact, it's just as tasty and nutritious as its cousin. It makes an excellent hummus.
Cooking :
- Soak them for six to eight hours, or overnight, in four times their volume of water (for one cup of peas, use four cups of water). To make cooking easier, add a little baking soda (2 teaspoons for 1 cup of peas and 4 liters of water). Baking soda softens the integument, which helps the water to penetrate the peas more easily, making them easier to cook when the time comes.
- Drain and rinse.

Bring them to the boil and simmer for about 90 minutes, or until they reach the consistency you like.
Storage :
Keep for up to one year in an airtight bag in a cupboard or cool, dry place.
