This pancake mix is a quick and easy way to make a breakfast or snack that the whole family will love. This versatile gluten-free alternative can be used to make thin pancakes, thicker pancakes, and even waffles!
Preparation method (4-6 pancakes):
What you need:
1 egg or egg substitute (mix 1 tbsp flax seeds and 3 tbsp water, stir until gelatinous)
1 cup milk or milk substitute (soy, rice, almond, or hemp)
1 cup GoGo Quinoa Pancake Mix
Optional: 1/4 tsp pure vanilla extract
Chef's Tip: Add your favorite fruit or chocolate chips to the dry mix.
1. In a small bowl, combine the egg (or flaxseed mixture) with the milk and vanilla. Gradually stir the liquid mixture into the dry pancake mix. Let the mixture sit for three minutes.
2. Heat the skillet over medium-high heat. When the skillet is hot, reduce heat to medium and add coconut oil or butter to the skillet.
3. Pour the pancake mix into the hot pan (about 1/2 cup), flip the pancake when bubbles begin to appear and the edges begin to brown.
