The yellow pea, a legume to rediscover! It is low in fat, rich in carbohydrates, protein and dietary fiber, in addition to contributing to the intake of several vitamins and minerals. Protein peas are a major asset, both agronomically and environmentally.

Legumes are excellent alternatives to animal protein and are often described as flavor sponges.

Use :

Serve cooked peas in salads, stews, or soups. They can be added to rice or cooked with Indian-spiced vegetables. Yellow peas are nicknamed the "chickpeas of Quebec." In fact, they are just as tasty and nutritious as their cousins. They make an excellenthummus.

Cooking :

Soak them for six to eight hours, or overnight, in four times their volume of water (for one cup of peas, add four cups of water). To make cooking easier, a little trick is to add a little baking soda (2 teaspoons for 1 cup of peas and 4 liters of water). This softens the seed coat, which helps the water penetrate the pea more easily and therefore makes cooking easier when the time comes.
Drain and rinse them.

Bring them to a boil and simmer for about 90 minutes or until they reach the consistency you like.

Conservation :

Keeps for up to one year in its airtight bag placed in a cupboard or in a cool, dry place.
